An assortment of bars (that do not become rock hard with low temp), mix of cashews, dried cranberries, and granola.  Some jerkies are good too.  I got to remember to bring along Fig Newtons next time.
And really hot tea in a good, slim thermos! :)

The op was about food that doesn't freeze, which excludes beer. In winter, I pack scotch.

The double espresso gels and dark chocolate truffles get my vote too.  peanut butter and honey, inside jacket pocket also works.

I do sometimes bring a Snickers skiing or snowboarding, inside my shell but outside my insulation.  Pop-tarts, Nutty Bars, little peanut butter on toasted crackers.  They're things I would consider eating even if I wasn't in the woods/on a ride. 

Beer is good too and if stowed properly won't freeze. 

Bourbon, Rye, Scotch, Cognac, whatever your choice, keep it near your cigars.

Also, I make breakfast at home and eat it on the two+ hour drive up.  Keeps me from having to bring/eat as much throughout the day.
