I've spent enough months sitting on glaciers to finally learn. Favorite meal is Annie's Mac & Cheese with slices of summer sausage, and M&Ms for dessert. Quick, easy (sub water for milk), and great. I go big with spin-fried pizza on the stove if it's a long trip in AK. Bringing a coffee cone (with filters) and real coffee is infinitely better each morning than instant coffee, unless you're only out for a night or three.
For gear, the extra weight of light puff pants and down booties can be worth it on a longer trip. A pyramid tent (even a small "3-man" one) is great for long trips on glaciers/snowfields for use as a cook tent with the floor dug out for seating and standing. A little sit pad, earplugs, and a paperback make the long nights much more bearable.
... and some cognac.
